My signature dessert for first night lodge clients. A warm rum cake with crystallized rum sugar on the bottom and a little white chocolate and cracked peppercorn fishy swimming on top. I served this whimsical dessert after the client’s fist day fishing so that everyone at the table could say they got their fish. A few of the guests took cell phone photos of their dessert to send home.
