Kick Your Bass

Bass with mixed sweet & hot peppers in spicy agave nectar and wine reduction

A  fresh and flaky bass filet served with chopped sweet bell peppers, jalapenos, baby tomatillos, fresh tarragon and Mexican oregano in a white wine reduction.  The reduction has agave nectar and southwestern spices added at the end of cooking.  Garnished with fresh cilantro right before serving. This dish is made without any fats so it is very healthy yet decadent tasting because of  the intense flavors of fresh herbs, spices and wine.
