Baby Tomatillo and Oregon Hazelnut Sweet-Tart Empanadas

Sweet-tart tomatillo empanadas

I found these little beauties at an Oregon farmers market.  Baby tomatiilos, also called cherry tomatillos, are nature’s own sweet candy.  They come in their own little candy wrappers and have a long refrigerator shelf life If you keep them in their husks.  Like traditional tomatoes, baby tomatillos are green and tart to golden yellow and sweet.  When green, the husks are green,  turning yellow as the fruit ripens.

I combined baby tart and sweet tomatillos with Oregon hazelnuts, agave nectar and allspice, cinnamon and cardamom.  No need for sugar with the light sweetness of dark agave nectar.  I filled empanadas with this fruity Sweet-tart filling, baked in the oven, and sprinkled with a little cinnamon and raw sugar.
